Mango Margarita Shakeology

Here's a new trick...make healthy things taste good and like your favorite cheat, and you'll never miss them.  Cocktails, dessert, whatever your vice is, explore with Shakeology and try to replicate it and when you do...heaven :) 

Ingredients:
1 cup unsweetened almond milk
2 Tbsp. fresh lime juice
1 cup ice
1 scoop regular or vegan Vanilla Shakeology
ยฝ cup chopped mango
1 tsp. finely grated lime peel (lime zest)
1 Tbsp. hemp seeds

Preparation:
1. Place almond milk, lime juice, ice, Shakeology, mango, lime peel, and hemp seeds in blender; cover. Blend until smooth. Yield: 1 smoothie

Chunky Jalapeno Avocado and Bean Dip

Chunky Jalapeno Avocado and Bean Dip

Ingredients
15 oz can chickpeas or white beans, drained & rinsed
1 large avocado, pitted & skin removed
1/4 cup water
2 tbsp olive oil, extra virgin
1/2 lime, juice of
1 tbsp jalapeรฑos, seeded & chopped (use 1/2 tbsp for kid friendly & more or with seeds to taste)
1 tsp salt
1/2 tsp ground black pepper
1/4 tsp cumin
Handful cilantro
1/2 cup corn (if using frozen thaw beforehand)

Chia Seed Pudding Parfaitย

To be honest, it was an acquired taste to me, but now I've grown to like it. SHOCKINGLY, my kids liked it right away!  (I know, come on mom, get on board!?!?!)  I'd love to hear some of your favorite recipes. 

Ingredients:

โ€ข 1ยฝ scoops Vanilla Shakeology
โ€ข 1 Tbsp raw honey
โ€ข 1 tsp ground cinnamon

What you can expect in 21 days...

It's the 4th and we are celebrating our independence, but I can't help but celebrate Julie's freedom of fear and thinking that's all there is! Berry Coconut Smoothie

Ingredients
1 cup unsweetened almond milk
1 scoop regular or vegan Strawberry (or Vanilla) Shakeology
ยผ cup fresh or frozen raspberries
ยผ cup Fresh or frozen blueberries (reserve a small amount for garnish)
1 Tbsp unsweetened shredded coconut (reserve a small amount for garnish)
1 cup ice

Instructions
Place water, Shakeology, raspberries, blueberries, coconut, and ice in blender; cover. Blend until smooth. See full recipe HERE.

Zoodle Chicken Salad-In-a-Jar

Ingredients:
4 cups spiralized zucchini
1 cup diced red bell pepper
2 cups cooked chicken breast, cubed
1/2 cup olives of your choice, pitted
4 Tbsp sliced green onions

Avocado Yogurt Dressing:
1 large ripe avocado
juice of fresh 1 lemon
2 Tbsp extra virgin olive oil
1/3 cup Greek yogurt,
1/2 tsp sea salt
1/4 tsp freshly ground pepper
1/2 tsp garlic powder
2 Tbsp fresh cilantro or parsley

Cover and refrigerate. Lasts 3-4 days.  Once ready to eat, shake the jar vigorously, or stir then pour onto a plate.

I love that Shakeology and Beachbody is for all body types.  This is one of my coaches, Rebecca Ray, and her husband John. Hello July! Hello Shift Shop!

Today is exciting to me!! New month, new goals, almost Independence Day and 1/2 through the year!! Gut check - how are your New Years resolutions going? When I think back to mine...it was to be together as a family again...and that is finally happening, I just had no idea it would mean moving across the world to do it! My other goals were to tone and teach my kids to cook. So far both are in progress :)

LOW CARB BRUSCHETTA

This is so ridiculously easy and costco sells them for $14 / bag so save your money and make them from scratch.  Plus, doesn't everything taste better when it's made from scratch?  Secret - I don't love to cook, but I know it's a necessity for my family and that my kids MUST eat :) so I do it.  But what makes it more fun is to assemble all the ingredients together at first and pretend I'm on a cooking show!  TRY IT!! It works.  Exercise and cooking are both just as much mental as they are capable.

I am reminded every day how lucky I am to have my career change from CPA desk job, to the fitness and clean eating coach life I have now.  I am never looking back!

Dori makes it seem so easy to just "keep swimming" in Nemo, but life feels very full right now, maybe too full.  We are very thankful for the opportunity in Australia and for my Apple Watch to keep reminding me to BREATHE!! 

On a side note, the main reason I got this watch was 1) there was noting else I wanted / needed for my birthday and my Garmin (which wasn't much cheaper, kept failing me) and 2) it tells me the local time and Brisbane time and my hubby felt it a wise investment so I'd stop calling him between 1-3 his time, waking him up. Smart guy!  Everybody wins, right?  :)  But, I hope you put little faith in your FitBit, Garmin, smartphone apps, because they tell you so little of the actual story. I was a steps junkie in the past too and focused on 20,000 steps a day (told you, "steps junkie") yet not I get around 11,000 and am way fitter than i've been in my life and have watched my resting heart rate drop from 72 to 54.  I do more weights and less carried and spend 1/2 the time.  Y'all, focus less on your watch or app and more on what your arms and legs are doing. That should be where you put your focus and your faith. 

What modifying on vacation looks like

This is an online fitness coaching business I can do from anywhere and my coaching doesn't end down under ๐Ÿ˜‚ so if you've been waiting, start now!! 4 people told me today "enough is enough!! I need this stat" but maybe a few other choice words. 

You are beautiful. You are enough. But we all can be better. And we all can be a priority. You deserve that too. Do I fight for it sometimes, yes!! But all ends better when the endorphins are flowing and mommy is sparkling. ๐Ÿ˜‚

It's not that hard to tell, but both are dang good and I had to try and replicate this yummy goodness from my apartment. This is totally Shift Shop and 21 Day Fix approved too!! You can sub carbs so easily (I prefer to drink those ๐Ÿ˜‚๐Ÿท), but this would have been delicious over a slice of toast if you were on 21 day fix or most of our other programs (each is paired with the container system and modified)

I'd like to say that the gelato my splurge for the day, but I think dinner and wine were too!! So de-lici-ous!!!

Count them - 3 dessert stops ๐Ÿ˜ต๐Ÿฆ๐Ÿจ๐Ÿฎโ˜•๏ธ Gelato, Ben & Jerry's (because we couldn't all agree) and then a coffee shop.  Thank goodness Shaun T has my number tomorrow. ๐Ÿค— Insanity Max 30, here I come. Then another pool & beach day because it's too gorgeous to go home!
